四川麻辣炸醬麵 (2 人份量)

Sichuan Minced_pork Noodle (Med.Hot n Spicy)

材料

Ingredient

  1. 碎猪肉  半磅
  2. 乾上海麵  ¼ 磅
  3. 蒜蓉 1 湯匙
  4. 熱滾水 8 杯
  5. 油 2 湯匙

醃猪肉醬汁

  1. 豉油 1/2 茶匙
  2. 生粉 2 茶匙
  3. 水 2 湯匙

調味料

  1. 海鮮醬  1 湯匙
  2. 磨豉醬  1 湯匙
  3. 茄汁  2 湯匙
  4. 辣椒醬  1 至 2 湯匙
  5. 豉油  2 湯匙
  6. 糖  2 茶匙
  7. 胡椒粉  1 茶匙
  8. 水  ½ 杯
  1. 1/2 lb. minced Pork.
  2. 1/4 lb. dry Shanghai noodle (see video).
  3. 1 Tbsp minced Garlic.
  4. 8 cup hot water.
  5. 2 Tbsp oil.

 

Seasoning Sauce (SS)

  1. 1/2 tsp Soy sauce.
  2. 2 tsp Corn starch.
  3. 2 Tbsp water.

Seasoning Mix

  1. 1 Tbsp Hoisen sauce.
  2. 1 Tbsp ground bean paste.
  3. 2 Tbtsp Ketchup.
  4. 1-2 Tbsp pepper paste.
  5. 2 Tbsp Soy sauce.
  6. 2 tsp Sugar.
  7. 1 tsp white Pepper.
  8. 1/2 cup Water.
製法
Method
  1. 乾麵放入 一煲滾水中煮熟 ( 水煲滾後 , 用中慢火約煑 10 分鐘至熟)
    取出掠乾水份,加入 1 湯匙油,拌勻待用
  2. 調味料拌勻
  3. 碎猪肉加入醃料拌勻
  4. 熱鍋內放入 1 湯匙油 , 加入蒜蓉略爆香,再加入碎猪肉炒熟,再放入調味料煑滾後 , 淋在麵上,即可享用
  1. Boil dry noodle in water; after water boiling lower heat and simmer for 10 min.; Drain, Add 1 Tbsp oil and Mix well; set aside.
  2. Mix well Seasoning Mix.
  3. Mix well Seasoning Sauce with Pork.
  4. Add 1 Tbsp oil onto hot pan; add garlic till hot; add Pork & stir-fry till hot; then Add & Mix well with Seasoning mix; Pour over noodlel (see video). ENJOY.
